the famous "escalope a la creme" . Get yourself a veal escalope. Put a minute amount of flour on it. Really minute. Also cover it with salt (in large granules) and pepper (not too much). Put some butter in a frying pan and let it melt. Fry the escalope for a couple of minutes each side. Use the force to establish when it is properly cooked. Remove the escalope and put it on a warm plate. Keep it in a warm place. Do NOT rinse the pan. Instead keep it on a low heat and add some cream (or creme fraiche if you have it). Cook slowly until the cream boils. Pour cream over the escalope. Enjoy with plain thick rice , and a baguette !
